The miracle happned today. After one week of LIPS tutouring my 6 1/2 yr old son came in and read me a book. Yes it was slow and halting but after spending all winter going over the same Dig Pig Dig! book wo any retention or progress this seems miraculous. He was so proud and pleased with himself he couldn’t stop grinning.
I’d promised him a chocolate hedgehog ( choc egg creme, spongefingers, toasted almond prickles) when he could read to me. I didn’t expect to so soon!!! Anyone want the recipe?

Thanks for commenting. I am still grinning. The best thing is that he’s retaining what he’s learned. And the casual, manly way he said today, “Mom, if you want i’ll read you another book at the end of the week.” I’ve also noticed he’s hugging everyone constantly. It must be such a relief to have his brain work -he just feels that good.

Chocolate Hedgehog
8 oz dk semisweet chocolate Beat together the butter and sugar until
8 fl oz milk pale, fluffy, and wo granules. 2 sticks butter This can take a long time. (5min)
1/2 cup sugar Melt choc in milk
3 eggs Beat in eggs one by one
8 oz ladyfingers (spongefingers) Then the choc milk
1 cup slivered almonds Leave to cool in frig
You also need a deep serving or baking dish with an oval shape
The oval dish gives the shape to the hedgehog. Layer the ladyfingers and choc in the dish leaving at least a third to decorate with. Chill. Then toss the almonds in about tblsp of butter until lightly toasted. Turn out the dessert on to a serving plate and spread with the reserved buttercream, mounding it up to give a nice hedgehog-like shape. Stick in the almond “prickles”. Add a licorice, or choc creme for a nose and some pistachio’s , jellybeans etc for eyes. Put some mint on the plate and some fresh strawberries or raspberries.The better the choc you use the better the flavour and texture.
